Fall is here and so are the many delicious and nutritious flavors of Fall. Our latest recipe is a delicious and healthy no-bake cinnamon apple cheesecake jar that is packed with health benefits of dates, apples, cashews, and Green Vibrance!

Ingredients:
Crumble:
- 12 Medjool dates, pitted
- 1 cup graham crackers (crumbs)
- 1 cups walnuts
- 1 tsp sea Salt
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 scoop Green Vibrance
Filling:
- 1.5 cups raw cashews, soaked overnight
- 6 Medjool dates, pitted
- 13.5 oz. can coconut cream
- 1.5-2 Tbs lemon juice (depending on preference)
- 1 tsp vanilla extract
Apple Topping:
- 4 gala apples, cubed into 1/2” pieces)
- 1 Tbs coconut oil
- 2 Tbs maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/2 tsp sea salt
- 1 tsp vanilla extract
Directions:
- For the filling, soak dates and cashews overnight in enough water to cover by 1 inch.
- In the meantime create the crumble by adding all ingredients to a food processor and blending until just combined.
- Transfer contents into individual jars or cups 1/3 of the way full.
- For the filling, drain the cashews and dates then combine all filling ingredients into a high speedblender and process until smooth and consistent.
- Pour the filling over the crumble 1/3 of the way, then transfer to the freezer to set for at least 3 hours, or overnight.
- For the apple topping, heat a large skillet to medium heat and add all ingredients. Stir to combine and sauté until the apples begin to soften (about 10-15 minutes). Allow to cool before using.
- When ready, return the jars and top with the apple mixture. Finally, share and enjoy!
