Winter is upon us and the means winter flavors are back! Our latest recipe is a delicious and healthy no-bake cheesecake jar that features the seasons favorite ingredients! Our No-Bake Winter Cheesecake Jars are packed with health benefits from cherries, pomegranate, walnuts, dates, and Green Vibrance!

Ingredients:
Crumble:
- 12 medjool dates, pitted
- 1 cup graham crackers (crumbs)
- 1 cups walnuts
- 1 tsp sea salt
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 scoop Green Vibrance
Filling:
- 1 cups raw cashews, soaked overnight
- 6 medjool dates, pitted
- 13.5 oz. can coconut cream
- 1.5-2 Tbs lemon juice (depending on preference)
- 1 cup pitted cherries
- 1 tsp vanilla extract
Topping:
- 2 cups pomegranate seeds
- 2 cups pitted cherries
Directions:
- For the filling, soak dates and cashews overnight in enough water to cover by 1 inch.
- In the meantime, create the crumble by adding all ingredients to a food processor and blending until just combined.
- Transfer contents into individual jars or cups 1/3 of the way full.
- For the filling, drain the cashews and dates then combine all filling ingredients into a high speed blender and process until smooth and consistent.
- Pour the filling over the crumble then transfer to the freezer to allow the filling to thicken as it cools for at least 3 hours, or overnight.
- When ready, return the jars and top with pomegranate seeds and cherries. Enjoy!
