Nutrient density refers to the ratio of micro- nutrients (i.e. vitamins, minerals, polyphenols, etc.) to macro-nutients (i.e. vitamins, minerals, polyphenols, etc.). Our ancestors commonly received far greater amounts of micro-nutrients in every mouthful of protein, fat and carbohydrate they consumed than we receive in the foods we eat today.
